The Recipe: Kesar Phirni with 7th-Generation Kashmiri Saffron
Ingredients:
1 litre full-cream milk
¼ cup basmati rice (soaked for 30 minutes)
½ cup sugar (adjust to taste)
A generous pinch of Saffron Cottage’s finest Kashmiri saffron strands, soaked in 2 tbsp warm milk
½ tsp cardamom powder
Chopped pistachios and almonds (optional, for garnish)
How to Make It (Step-by-Step)
1. Prepare the Rice Base
Drain the soaked rice and blend it into a coarse paste with a little water. This gives phirni its signature creamy texture.
2. Heat the Milk
Bring milk to a boil and let it simmer. Slowly add the rice paste while stirring continuously to avoid lumps.
3. Slow Cook for Creaminess
Let the mixture cook on low flame until it thickens. Phirni requires patience—this slow thickening is where the flavour builds.
4. Add Sugar and Aroma
Mix in sugar and cardamom powder. Stir until fully dissolved.
